No-Bake Carrot Cake Energy Bites

In today’s market, a plethora of natural sweeteners are available, responding to the growing demand for healthier sugar alternatives. When you step into your local health food store, you’ll often find an entire shelf dedicated to these natural sweeteners, making the choice between them somewhat perplexing.

In my view, the less processed the sweetener, the better it is for you. Options like maple syrup, honey, or fruit are consistently the top choices. Nevertheless, it’s vital to remember that even the finest natural sweeteners are still sweeteners and should be consumed in moderation, rather than as an everyday indulgence.

Just because a sweetener is derived from dates or honey doesn’t grant us unrestricted consumption rights. They are, after all, a slightly healthier alternative to plain white sugar. The key to success lies in moderation. This doesn’t imply that we should abstain from them altogether; instead, we should be mindful of how often we consume them.

Ingredients

  • 2 medium carrots, shredded (approximately 3/4 cup)
  • 3/4 cup walnuts
  • 3/4 cup pecans
  • 3/4 cup dried dates
  • 1/4 cup dried apricots, roughly chopped
  • 1/2 tablespoon ground cinnamon

  • 1 teaspoon vanilla extract
  • 1/8 teaspoon sea salt
  • 2 tablespoons maple syrup (optional)
  • 1/2 cup shredded coconut

Instructions

  • In a food processor, combine walnuts, pecans, and spices; pulse until a coarse meal forms.
  • Once the nuts are ground, add dried dates, apricots, vanilla extract, maple syrup (if desired), shredded carrots, and sea salt. Blend in the food processor until a thick paste is achieved.
  • The addition of maple syrup is optional; taste your mixture for sweetness and add maple syrup as needed.
  • Shape the mixture into golf ball-sized balls and set them aside.
  • Place shredded coconut in a small bowl and coat each rolled ball with coconut one at a time.
  • Store the energy bites in an airtight container in the refrigerator or freezer. They will stay fresh in the refrigerator for up to a week or in the freezer for several months.
  • Enjoy!
